Vegetarian Nacho Casserole Recipe




We have several weekly recipes that keep our family happy at dinner time. Vegetarian Nacho Casserole is one of our favorites, it is easy to to make and tastes delicious.

  • 1 can (10 3/4 oz) condensed Cheddar cheese soup
  • 1/3 cup low fat milk
  • 1 jar (16 oz) mild or medium hot organic salsa (we used a fresh organic salsa with green chiles)
  • 1 bag (7 oz) baked chips (our favorites are Tostitos organic yellow corn tortilla chips)
  • 1 (16 oz) can vegetarian re-fried beans
  • 1 cup of shredded cheddar cheese.

Preparation:

Preheat oven to 400 deg F and in a deep rectangular or square ceramic or glass oven proof dish stir the condensed cheddar cheese soup with the half cup of milk until fully blended;

nacho_casserole_beansNow spread half of the salsa over the cheese soup and add a layer of the chips. Next spread the re-fried beans over the chips (we usually use two 16 oz cans!).

Top with the remaining chips and salsa and sprinkle the shredded Cheddar cheese evenly over the top;

Bake until hot, this normally takes about 18 – 20 minutes, you should see that the Cheddar is nicely browned and the cheese soup bubbling up around the edges;

We like to enjoy ours with some sour cream, we hope you like it!
